best salad - ever
I love cookbooks and more than that I love really good food. I found this salad in Trisha Yearwoods cookbook Georgia Cooking, Oklahoma Kitchen.
All i can say is you have to try it to believe it. It’s that good!
Ingredients
1 cup sliced almonds
1/2 cup sugar
1 head of iceberg lettuce
1 head of romaine lettuce
1 cup of vegetable oil
1/4 cup of red wine vinegar
1 tablespoon chopped parsley
3 green onion (scallion) tops, thinly sliced
1 22oz can mandarin oranges, drained and chilled
optional: dash of black pepper, dash of cayenne and salt
Directions
Mix the almonds with 1/4 cup of the sugar in a medium saucepan. Cook over medium heat, stirring as the sugar melts and the almonds brown. Carefully spread the almonds on an ungreased baking sheet to cool, using a metal spatula; the nuts will be very hot. When completely cooled, break the candied almonds into tiny pieces.
Tear the iceberg and romine lettuce into pieces and wash well. Dry the greens thoroughly and toss them into a large salad bowl. Cover and refrigerate. In a separate small bowl, combine the oil, vinegar, remaining 1/4 cup of sugar, parsley, salt, pepper and cayenne. Mix well - seriously mix well. This takes a good minute or two to really blend the dressing. Grab the lettuce from the refrigerator and add the sliced onions, candied almonds and oranges.
