Ingredients
To make this recipe even easier - use 1 1/2 c. canned apple, cherry, blueberry etc. pie filling.
2-3 McIntosh apples (these are the best apples to cook with) peeled, cored and thinly sliced
1/3 cup of sugar
1/2 tsp cinnamon
1/2 tsp vanilla extract (optional)
1 can of biscuit dough
Confectioners’ sugar
Oil for frying
Directions
Over medium heat cook apples, cinnamon, sugar and vanilla extract. While the apples are cooking down separate your biscuits. Press 2 biscuits together to form a 7 inch circle (repeat w/remainder biscuits.) Apples are done at the fork consistency you like. I like mine soft (more of a Mickey D style.)
Place 2 tablespoons of apple (or pie) filling in center of each circle. Moisten edge, fold in half, seal edge with fork, prick top.
Pour vegetable oil in heavy skillet to depth of 1/4 inch. Heat slowly to 375 degrees on deep fat thermometer.
Fry pies about 4 minutes on each side, until golden brown. Drain on paper towels; sprinkle with confectioners’ sugar. Makes 10 pies
